MANGO BIRD'S NEST EGG TART DELIGHT

Ingredients:
- 1 piece of bird’s nest (8g)
- 12 ready-made tart shells
- 1 mango
- ½ cup heavy cream (35% fat dairy cream, 118 ml)
- ½ cup sugar (granulated white sugar, 115 g)
- 1 ¼ cup whole milk (300 ml, 3.5% milk fat)
- 3 egg yolks
Cooking Instruction:
- Soak Bird’s Nest: Soak the bird’s nest in water until it softens.
- Clean and Shred: Clean the softened bird’s nest and shred it into smaller pieces.
- Combine Ingredients: In a pot, combine milk, heavy cream, sugar, chopped mango, egg yolk and the prepared bird’s nest. Start whisking the mixture until no lump exist.
- Baking preparation: Place the ready-made-tart shells onto the metal pan. Fill the ready-made tart shells with the mixture until it is about 1/2 inch away from the top of the shells.
- Bake: Bake the tarts in a very hot oven preheated to 500°F for approximately 18 minutes, or until the tops begin to brown.
- Serve: Take out the Metal pan with the baked bird’s nest egg tart and it is ready to be served.
